Butcher – Boucherie Upper West Side

About Us
Boucherie, the French bistro and steakhouse from The Group Hospitality, is opening on the Upper West Side. Meat is at the heart of our menu, and we're looking for a skilled Butcher to join our opening culinary team.

The Role
The Butcher prepares, trims, and portions meat to our recipes and standards, and makes sure every cut is properly stored, weighed, and labeled. 

What You'll Do
- Inspect incoming meat for quality and correct quantities before processing
- Clean, cut, weigh, package, and label meat to our high-quality standards
- Maintain accurate portion control and minimize waste
- Keep records of meat inventory and on-hand supplies based on recipe needs
- Store product at proper temperatures and follow rotation procedures per DOH regulations
- Maintain, clean, and sharpen knives, saws, and equipment, and perform routine repairs
- Set up, clean, and stock your station before each shift and complete prep, opening, and closing checklists
- Maintain Department of Health sanitation standards and report any safety concerns to the Chef on Duty right away
- Support your teammates wherever needed

What We're Looking For
- 2+ years of butchery experience in a similar-caliber restaurant
- Experience with meat processing and equipment maintenance
- NYC Department of Health & Mental Hygiene Food Protection Certificate
- High school diploma or GED preferred
- Able to lift 30+ lbs and stand, walk, and bend for extended periods
- Able to work nights, weekends, and holidays
- Clear communication in English and basic math skills
- Positive attitude and professionalism under pressure
